Abstrak :

The existence of solid waste produced from tofu production will have an impact on the environment. The extracted tofu has a high water content which in short shelf life. Even though tofu waste has the potential as a substitute for the ingredients in the production of tempe.  In addition to reducing environmental pollution, tofu waste tempe can be used as an alternative to foods with high protein content.  This study aims to determine the effect of adding shrimp powder in the production of tofu waste tempe. The penclition was conducted in July 2019. This research was a experimental experiment using a Factorial Complete Randomized Design with 6 treatments and 3 replications with ANOVA test at 5% error rate and continued  with LSD test and organoleptic test.  The results of the study showed that there were differences in the growth rate of misellan, protein content variation and organoleptic test which showed the best results in A2B3 treatment.
