Abstrak :

Food  is  a  basic  need  for  humans.  Healthy  food  is  food  that  does  not
contain  bacteria.  If  food  is  detected  by  bacteria,  the  quality  of  the  food  will
decrease.  Foods  that  have  been  contaminated  with  microorganisms  can  cause
disease.  Many  traders  sell  snacks  in  the  coastal  tourism  area  of  Padang,  one  of
which  is  pensi.  Pensi  is  very  popular  with  tourists  that  are  visiting  the  coast  of
Padang, they consume it as snacks and various side dishes. This purpose of this
research is to determine the feasibility and  quality of snacks sold in Padang beach
tourism  areas  viewed  from  their  bacteriological  aspects.  This  research  was
conducted  from  July  2018  at  the  Basic  Biology  Laboratory  of  STKIP  West
Sumatra PGRI. This research is a descriptive study to determine the feasibility of
quality  in  pensi  snacks.  This  research  used  the  Most  Probable  Number  (MPN)
method using three testing stages, namely the Presumptive Test, the Confirmative
Test, the Completed Test. Based on the research that has been done, it was found
that  pensi  snacks  found in  Padang  beach  tourism  areas  detected  faecal  coliform
bacteria ranging from 2400 cells / 100 ml to be included in the poor criteria. In
this category, snacks were not suitable for consumption
